I LOVE my Oma’s plum cake (Pflaumenkuchen). It’s summery, decadent, and yet light enough that it’s perfect always. I was craving just this cake, but happen to have none. Enter: mug cake! Making single-serving cakes in a mug has been a revelation to change my life. Ok, maybe that’s an exaggeration, but seriously…cake, just for yourself, in less time than it takes to steep a cup of tea?! Yes please! And the possibilities are endless. Any cake you like can be made in a mug. Trust me.
With that knowledge, I concocted this beauty. Don’t like plums? Try peach, nectarine, strawberries, or any other fruit. It’s perfect for those late night cravings, and also when you want to have a weeknight dessert for your picky-eater family. Everyone gets the fruit they want!

Plum Cake in a Mug
Serves 1
- 3 tbsp flour (AP, whole wheat, whatever you like!)
- 1/4 tsp baking powder
- 1/8 salt
- 1 tbsp maple syrup (or honey to make vegan)
- 1 packet stevia or 1 tbsp brown sugar (optional – use only if you like a very sweet cake)
- 1 tbsp water
- 2 tsp oil
- 1/4 tsp vanilla
- 1/4 small plum (slice a plum very thin, use a quarter of it, and eat the rest while this bakes!)
- sprinkle of granulated sugar
In a small bowl, mix dry ingredients together. Mix in wet ingredients until combined.
Spray a ceramic coffee mug with PAM and fill with batter. Lay sliced plum on top, and sprinkle with sugar.
Bake in microwave for 60 seconds. You may need to add 30 seconds, depending on your microwave. Remove, transfer to a plate, and enjoy!
