Leftover Pumpkin Pie Pancakes

Congratulations on surviving the Thanksgiving weekend! If you’re anything like me, your fridge is still stocked with all sorts of leftovers, in the form of stuffing, cranberry sauce, green beans, turkey (for my boyfriend), and pie…lots of pie.

Rather than just reheating those leftovers in the microwave try transforming those tasty morsels into soups, sandwiches, frittatas, quesadillas, and pancakes. Yep, pancakes!

I’m all for eating pie for breakfast. And we have lots of pumpkin pie. But I wanted to do something with this dessert. So I took my favorite vegan pancake recipe, replaced the overripe bananas with the filling from my pumpkin pie, and voila! A delicious, fiber-filled breakfast that still tastes like dessert. Better yet, I topped these flapjacks with some leftover homemade cranberry sauce.

Leftover Pumpkin Pie Pancakes, adapted from Colourful Palate
Makes 10 3″ pancakes

  • 1-1/4 C old fashioned oats
  • 1/4 C flour, either all-purpose or whole wheat
  • 1/4 C flaxseed meal
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1-1/2 C non dairy milk of choice
  • 2/3 C filling from a baked pumpkin pie, scooped out of the crust (discard leftover crust)

Preheat your griddle or large frying pan.
Use a food processor to puree all the ingredients until smooth. You’ll need to scrape down the sides once to make sure everything is incorporated.

Spray the hot griddle or pan with PAM or grease with a fat like coconut oil or butter.

Scoop 1/3 cup of batter for each pancake. I used a 1/3 cup measuring cup, and was able to cook four at the same time. Cook until small bubbles begin forming on top, and then flip, cooking another 2 minutes or until bottoms are golden brown.

Use a wide spatula to transfer to a serving plate. Repeat process until all batter has been used up. I made 10 pancakes, about 3″ in diameter.

Serve warm with leftover cranberry sauce, maple syrup, nut butter, or even whipped cream! Enjoy your transformed “pie for breakfast.”
