Now that I’m training once again for a half marathon, my summer evenings are quickly being whittled away. It’s not always easy to find time for running, family, chores, friends, and cooking. Rather than settling for a packaged meal, or going out to eat all the time, I strive to make dinner most nights of the week.

That’s where these 30-minute meals become incredibly handy. Healthy food doesn’t always have to take long to make. A combination of vegetables, lean protein, whole grains and healthy fats makes the perfect dinner. And in my life, cheese often plays a big part of that πŸ™‚ The uses are endless, and it can really elevate a dish to be something your whole family can look forward to eating.

Spicy Vegetable One Pot Pasta

This pasta is the perfect quick weeknight dinner. All the ingredients cook together in the same pot, at the same time. It’s packed with vegetables and the spicy Ghost Pepper Monterey Jack cheese gives it a bit of a kick.

Risotto is an elegant classic dish that may seem daunting and time-consuming, but can actually be made in 30 minutes, start to finish. Roasted sweet potato makes this a hearty main or a side dish to just about any protein. The Parmesan cheese is the perfect finishing touch.

Baked Spinach Quesadillas

Gjetost Filled Shortbread Cookies

No dinner is complete without a sweet treat! This simple shortbread is filled with a layer of Gjetost – a cheese that looks and tastes like caramel candy. The end result is a buttery cookie layered with a sweet, salty caramel cheese that’s sure to please everyone!

It’s time once again for my guest post over at the Wisconsin Cheese Mart blog! The challenge this time: create cheesy recipes for a brunch spread.

Well now, that’s combining two of the best things: cheese and brunch, which is arguably the best meal. I could easily eat breakfast all day long, and brunch aims to accomplish just that! Throw in a spicy Blood Mary or mimosa, and you’re set for the day.

I rose to the challenge just like a cheese souffle rises in the oven. The result? A brunch filled with cheesy morsels to rule them all.

For starters, I created a sweet potato and chocolate mousse topped with an Espresso parmesan cheese tweel. I wanted to set the stage for the meal with both sweet and salty flavors in one.

Next up are these adorable caprese pinwheels, which appear more difficult to make than they are! A simple puff pastry sheet is filled with a mixture of fresh tomatoes, smoked string cheese and basil straight from my garden. The pastry is rolled up and sliced, ready to bake. The result: a wonderfully savory pastry that can be enjoyed on its own, or paired with the rest of brunch.

These vegetable egg cups get their richness from the shredded 5-year aged cheddar that goes on top. Fresh veggies enhance the overall texture,and the cheddar just slightly disperses throughout the cups as they bake. Even better: you can easily customize these cups to your own preferences, or allow your guests to add the ingredients they like most!

Finally, brunch is not complete without a sweet note to end on. I folded Blueberry White Cheddar cheese with fresh blueberries and real maple syrup into another sheet of puff pastry, folded them into turnovers, and brushed the tops with a bit of melted butter, which gives the baked result a beautiful toasted brown color. The melted cheese combines with the full blueberries to create a flavor explosion in your mouth!

Apple and cheddar are a classic pairing, no doubt. But this muffin recipe incorporates the buttery flavor of Butterkase cheese, instead of a sharp, aged cheddar to make a breakfast meal that everyone will love.
