Yesterday, we celebrated another First Contact Day! Yep, it’s that time of year again, when we observe the future meeting between humans and the alien race from Vulcan. April 5, 2063 draws ever closer, which of course required another party. Check out this post if you have no idea what I’m talking about – it’s a Star Trek thing 🙂

Chris did a fabulous job setting the apartment to Red Alert; the Tribbles were multiplying out of control; Trek trivia was being thrown about throughout the night; food and drink were enjoyed by all.

We began by watching the two-part The Next Generation two-episode story “All Good Things,” which was a nice way to kick off what was to come of encounters with the Borg. Spoiler: Resistance is Futile!

After settling into our seats on the Bridge, we turned on the movie Star Trek: First Contact. Collectively (no, not the Borg Collective), I think we had the movie memorized by now! This was, after all, our 4th annual First Contact Day party.

Aside from actually buying a replicator to make food for the party, we did an excellent job embodying all that is Star Trek for some eats and treats.

Of course the Tribbles made an appearance, in the form of paleo coconut macaroons!

Odo’s baked Bruschetta was a popular snack. Picard’s cheese board delighted all. Isolinear chips & dip were nice to nibble on. Polarity-Reversing Gravity Bombs were sure to knock us back a lightyear or two. Alvinian Melons provided a fruity side, along with some Vulcan vegetables.

Science and Engineering cupcakes brought some sweetness to our away missions (you’ll notice the red shirts were mysteriously gone…). I made these paleo chocolate cupcakes, which are gluten- and dairy-free, and topped them with mint and orange versions of the frosting from last year’s Cellular Peptide cake!

Science & Engineering cupcakes!

Bajoran Hasperat gave us something spicy to enjoy. Traditionally, “it was made using a specially prepared brine, which if made correctly would cause the eyes to water and sear the tongue.” However, in an effort so spare our eyes and tongues, I simply made pinwheels using low carb tortillas, plain vegan cream cheese, hot sauce and sweet red peppers. Details below!

Finally, I made “Mool,” which is essentially a pot of baked beans, but way better! This is a slow cooker recipe, which makes it perfect for chilly days or busy parties. These beans are vegan, with no added fat. Oh, and they’re made with a bottle of beer, so you know it’s gonna be good 🙂 See below for the recipe!

These beer baked beans are great no matter the occasion!

Hasperat {Spicy Pepper Vegan Pinwheels}, adapted from the Star Trek Cookbook

Makes 24 Pinwheels

  • 6 8″ low carb tortillas
  • 6 tbsp plain vegan cream cheese
  • 6 sweet twister peppers
  • 6 tsp hot sauce (more or less, to your liking)

Cut the tops and tips off of the peppers. Remove seeds and slice them thinly, lengthwise.

Spread one tablespoon of cream cheese onto a tortilla. In a line down the middle, drizzle/spread a teaspoon of hot sauce. Lay one pepper’s worth of slices onto the tortilla and roll it up tightly, as you would sushi. Slice off the ends of the rolled tortilla, then cut each tortilla into 4 equal pinwheels.

Repeat with remaining tortillas. Serve with toothpicks on the side. You’ll notice that I made half of mine “mild” – I left off the hot sauce because not all of our guests like spicy foods.

Mool {Vegan Beer Baked Beans}, adapted from the Star Trek Cookbook

Serves 6-8

  • 1 lb dried Navy beans
  • Water to cover, plus about 2 cups to add halfway through
  • 1 bottle beer (such as a Maple Scotch ale)
  • ¼ C molasses
  • 2 tbsp German mustard
  • 2 tbsp Worchestershire sauce
  • 1 small onion, diced
  • Sea salt and black pepper, to taste

Combine all ingredients, except* the two extra cups of water, into your crockpot. Turn it on high and let cook for 8-10 hours.

About half way through, add the extra water and stir. This is necessary so your beans don’t burn, and they become cooked through.

*If you will be gone for the duration of cooking time, just add the extra water at the beginning with everything else.

Yesterday, I posted about the Firefly dinner party my friends and I enjoyed, complete with themed foods and drinks! Here’s the continuation of that: Kaylee and River’s foods!

This post is also in conjunction with the August challenge of Recipe Redux: bars and bites for brown bags. These fruity oaty bars are the perfect snack bar for school lunches, after school snacks, mid-day nibbles at the office, or even before/after a workout!

Kaylee, being the girly grease monkey she is, deserved something sweet, bright, a little healthy, and a whole lotta shiny. So, we created Kaylee’s Shiny Smoothies: plain nonfat yogurt, fresh strawberries, fresh basil, and a little bit of honey – blend it together, and enjoy!

The choice for River was an obvious one: Fruity Oaty Bars. This version contains no subliminal messages, but is instead packed with protein, fiber, and healthy fats. I chose to use raisins as the “fruity” part, and peanut butter holds together the oats. Instant nonfat powdered milk lends a great dose of protein. These are easy to make, require no baking, but won’t make you bust out of your blouse 😛

Fruity Oaty Bars, adapted from Chocolate Covered Katie

Makes 12 bars

  • 1.5 C old-fashioned oats
  • 1/4 tsp sea salt
  • 2/3 C instant nonfat powdered milk
  • 1/2 C peanut butter
  • 1/2 C honey
  • 1/2 C raisins (or dried fruit of choice)

Line a 8×8″ baking pan with parchment or wax paper – set aside.

Mix dry ingredients together first in a medium bowl. Add in peanut butter, honey and raisins. Mix well until completely combined – you want nothing to remain “dry!”

Press the mixture into the prepared pan and spread it out to the edges & corners. Use another sheet of parchment or wax paper on top to press down the mixture so it’s even in the pan. Freeze until hard – at least an hour or two, then cut into bars.

Keep chilled in the fridge, or store in an air-tight container in the freezer to last even longer as if these won’t be eaten in 24 hours!)

Yep, that says Firefly. That amazing Joss Whedon show that lasted only a season, sadly. To celebrate its awesomeness, and ours, my friends and I had ourselves a Firefly dinner party. We marathoned the show, while eating & drinking themed menu items we made from scratch!

Hors d’oeuvre

We started off with a nod to those crazy, scary Reavers, and to Blue Sun corporation. A good way to be everywhere, in everyone! Ok, that’s creepy but so are both the Reavers AND Blue Sun!

    • Blue Sun Nachos: Blue tortilla chips, shredded mozzarella, halved cherry tomatoes: Layer on baking sheet, bake at 400 for 15 minutes.
    • Bloody Reavers: Tomato juice, jalapeño vodka, Worcestershire, barbecue sauce: Pour into glass filled with ice, shake up, drink!

Dinner

Let’s get to the good guys. The obvious choice for Book was mini shepherd pies – single servings of healthy, wholesome, and slightly religious goodness. Wash might be the “leaf on the wind,” but in edible form, he was a leaf on the grill – well, more like eggplant on the grill. It worked for us! Zoe always wants to be the Big Damn Hero, so burgers seemed the right way to go. I simply opted out. And for the drink: we chose a cocktail that’s full of junk, a little bit raw, but will knock you on your ass! Just like Serenity herself 🙂

      • Mini “Shepherd Book” Pies: Mini shepherd’s pies
      • Wash’s Leaf on the Grill: grilled sliced eggplant
      • Zoe’s Big Damn Hero Burgers: thick beef burgers my friends enjoyed, mixed with some Worcestershire sauce
      • Serenity Absinthe Cocktail: Egg white, lemon juice, simple syrup, whiskey and absinthe

After Dinner Snacks

We had to keep the noms coming, if we were going to keep the marathon running, so we snacked on poppers that were just aiming to misbehave, and a cheese plate worthy of a Companion’s presence. We know Inara would have approved.

    • Mal’s Aim to misbehave poppers: Spicy jalapeno poppers filled with a rice and black bean mixture
    • Companion’s cheese plate: a variety of quality, tasty cheeses, a cracker medley, sliced green apple, and dried cranberries

Dessert

No Firefly party is complete without recognizing the “heroic” act of Jayne when he released his treasures (and cohort) onto what became Jaynestown. So to honor him, we sipped some sweet Mudder’s Milk, which went perfectly with the chocolatey bullets straight out of Vera.

  • Jayne’s Mudder’s Milk: 1 part Kahlua, 1 part Bailey’s, 1 part Vodka, 2 parts Milk
  • Vera’s Bullets: Chocolates in the shape of bullets!
