If you’re looking for a healthier way to celebrate spring, Cinco de Mayo, or just any old day, these Roasted Strawberry Margaritas are the key! With simple ingredients, this drink is one to put on repeat all summer long. This post was originally part of a past #Cookoutweek giveaway, but I wanted to make sure you could enjoy it year after year!
Spring & summer BBQ time is finally here! Food, drinks, picnics, and cookouts are the highlight of summer, in my opinion. They’re a great way to hang out with friends and family, meet new people, and enjoy being outside, because the season is short and you have to take in every minute of it.
There’s nothing like a chilled, refreshing margarita to kick off a cookout or any gathering, and this one is packed with flavor and no weird ingredients. Roasting strawberries, or any fruit for that matter, brings out their natural earthy flavors. Sprinkling a bit of sugar over the berries creates a delicious, natural juice that can be used in place of simple syrup in your drink.
To make this work: roast your berries the night before you intend to serve these drinks. You’ll want the roasted berries to be well-chilled before you blend up this cocktail.
Roasted Strawberry Margaritas
Serves 8
- 2 pints strawberries, washed and stems removed
- 1/4 C coconut sugar
- 8 limes
- 8 oz silver tequila
- 2 C ice
Preheat oven to 375. Line a rimmed baking sheet with foil and spray with PAM.
Lay out the strawberries in a single layer on the baking sheet. Sprinkle with coconut sugar. Roast for 20 minutes.
Remove from oven and let cool.
Transfer berries and the juices to an airtight container and refrigerate for four hours or overnight.
To prepare the cocktails, blend the strawberries (and juices) with the fresh lime juice, tequila, and ice. Pour into 8 glasses and garnish with a lime wedge or fresh strawberry.
Do I have to wait until the weekend for these? Can’t this somehow be a breakfast drink? 🙂
