Whole Wheat Clementine Pancakes

I have a weekend recipe that’ll rock your world. It’s prime citrus season, so everyone always seems to have a box or bag of cute little clementines on hand. Instead of letting half of them go to waste, whip up these delicious and healthy whole wheat pancakes for breakfast tomorrow!

Whole Wheat Clementine Pancakes, adapted from Hail Mary Food of Grace

Makes 8 pancakes, to serve 4 people

  • 3 clementines
  • 1 C non-dairy milk
  • 1/2 C plain nonfat Greek yogurt
  • 1 tsp vanilla extract
  • 1 tbsp vegetable oil (or sub melted coconut oil)
  • 1 C whole wheat flour
  • 1 tsp baking powder
  • 2 tsp organic sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt

Clementine syrup:

  • 1 clementine
  • 1/3 C grade B maple syrup

Preheat your griddle, or get out a large nonstick pan.

Zest the clementines into a small mixing bowl; set aside.

Pour milk into a measuring cup and juice the now-zested clementines into the milk. Set aside to allow it to curdle.

In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.

Now that the milk has curdled, pour it into the bowl with the zest. Add the Greek yogurt, vanilla, and oil. Whisk together and then pour into the dry ingredients.

Whisk the batter until just incorporated.

Grease your hot griddle surface or pan with some spray PAM or rub with coconut oil. Using a 1/4 measuring cup, scoop batter onto hot surface and cook until small bubbles begin to form, about 2 minutes. Flip and cook another two minutes, until golden brown. Transfer to a serving plate and repeat until you’ve used up all the batter. You should get about 8 pancakes 3″ in diameter.

While the pancakes cook, make the clementine syrup. Zest a clementine into a bowl, then juice it thoroughly. Add in the maple syrup and stir well.

Serve pancakes hot, drizzled with the clementine syrup. Enjoy!
