Vegan Black Bean Tacos with Spicy Cabbage Slaw

This time of year centers around rich foods – carb-heavy dishes loaded with fat and sugar and sauce and everything else delicious and unhealthy! While it’s OK to occasionally indulge, it’s also crucial to your health and sanity to continue making hearty, wholesome dishes to fill the meals between holiday celebrations.

These tacos fit the bill! They’re bursting with protein and fiber, are sure to keep you full, and have a nice spicy kick to them, which will help keep you warm and boost your metabolism.

Make the taco filling while your slaw marinates in the fridge, and you’ll have dinner on the table in no time, perfect for those nights you need a quick meal between shopping and working out.

Vegan Black Bean Tacos with Spicy Cabbage Slaw

Serves 3-4

Spicy Cabbage Slaw:

  • 1 C shredded cabbage
  • 1 tbsp chili-infused olive oil
  • 1 tsp lemon juice
  • 1 tbsp rice wine vinegar
  • salt & pepper, to taste

Black Bean filling:

  • 1 tbsp olive oil
  • 1 bell pepper, finely chopped
  • ½ yellow onion, finely chopped
  • 1 jalapeno, seeds removed and minced
  • 1 can black beans, rinsed & drained
  • 1 tsp cumin
  • 1 tsp corriander
  • ½ tsp chili powder
  • salt & pepper, to taste
  • 2-3 10” tortillas (or 4-6 6” corn tortillas)
  • shredded cheese or Greek yogurt for topping (optional)

In a medium bowl, toss together the shredded cabbage with oil, juice, vinegar and salt & pepper. Cover and refrigerate while you cook the taco filling.

Heat olive oil over medium-high heat in a large skillet. Saute bell pepper, onion and jalapeno 5-7 minutes. In a small bowl, mash up the black beans with a large spoon, to break down most of the beans. Add them to the skillet and continue cooking, another 5 minutes, stirring occasionally.

Season with spices, salt and pepper. Cook through for another 3 minutes to bloom the spices.

Warm tortillas for 30 seconds and spoon taco filling into the center of each. Top with spicy cabbage slaw, and any other toppings if desired.
