Almond Joy Brownie Bites {vegan, gluten free}

Happy Halloween! Aren’t you excited about all the candy, chocolate and sugar-coma-inducing treats that abound from every possible source? I can’t walk through my office without strolling past bowls full of Halloween-covered M&Ms, bite-sized candy and store-bought baked goods.

Sound tempting? Not to me. A few years ago, I got “off” candy. Oh, I had the biggest sweet tooth. In fact, I still do! But, I’ve learned to tame the cravings, indulge in sweet fruits and the occasional dessert. Candy is no longer interesting to me…

Ok, that’s not entirely true. I used to LOVE CANDY! And sure, I’m still tempted to cave and unwrap a York Peppermint Patty, or bite into a rich Almond Joy. Well, that’s exactly what prompted this recipe! The desire for a candy alternative, AND this month’s Recipe Redux challenge – to celebrate National Nut Day.

I’ve created a delicious, sweet and indulgent dessert that’s healthy, vegan, gluten free. They’re loaded with almonds, coconut and chocolate. What could be better? Make these to satisfy your Halloween cravings, and save the candy for the trick-or-treaters.

Almond Joy Brownie Bites {vegan, gluten free}
Makes 30 brownie bites

  • 1/2 C almond flour
  • 1 C gluten-free flour blend
  • 10 tbsp cocoa powder
  • 1 C shredded unsweetened coconut
  • 1/4 tsp sea salt
  • 4 flax eggs (4 tbsp flaxseed meal mixed with 8 tbsp water – let sit 5 minutes)
  • 1/2 C coconut oil, melted
  • 1/2 tsp coconut extract
  • 1 tsp vanilla extract
  • 1/2 C organic cane sugar
  • 1/2 C organic brown sugar
  • 30 whole almonds, unsalted

Preheat oven to 350°. Spray three mini muffin tins with PAM.

In a large bowl, mix together almond flour, cocoa powder, shredded coconut and sea salt. Stir in the flax eggs, melted oil, extracts and sweeteners.

Scoop batter into greased mini muffin tins. Top each with an almond.

Bake 15-20 minutes. Let cool 10 minutes before removing from the pan.

Note: I found it most effective to cool these in the freezer for 10 minutes. This prevented me from breaking the bites upon removal from the tins.

 

Serve immediately or store in the fridge in an airtight container.
