Summer Vegetable Dill Pasta Salad

I’ve come to learn that pasta salads can be made with almost anything, brought to a gathering, and always devoured. There’s something about the combination of pasta, vegetables and dressing that just makes people scoop it up like crazy until there’s none left!

This pasta salad is a take on my favorite cucumber salad. With the addition of healthy pasta, chickpeas and corn, this makes a full meal, or an amazing side dish for your next BBQ or picnic. In fact, I brought this on a picnic to the local beer garden. It was wonderfully perfect on a warm summer evening.

Summer Vegetable Dill Pasta Salad
Serves 4

  • 8 oz whole wheat or other healthy rotini Pasta
  • 2 large or 4 small cucumbers, peeled
  • 2 ears of corn, shaved off the cob
  • 1 can chickpeas, rinsed & drained
  • 1 packet dill salad dressing seasoning (I like Knorr)
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • Salt and pepper, to taste

Cook pasta according to package directions. Drain and let cool.

Meanwhile, slice the peeled cucumbers in half lengthwise. Scoop out the seeds with a spoon. Slice into thin half-moons.

Combine  cucumbers, raw corn, chickpeas and cooked pasta in a bowl.

On a small bowl, mic together the seasoning with oil, vinegar, salt and pepper. Pour over the pasta mixture and stir well to coat. Let cool in the fridge, at least one hour, or even overnight.

Serve chilled and enjoy!

    I am not a fan of dill flavor, what other flavor do you suggest?

      Perhaps an Italian dressing packet. Or even a Ranch dressing packet would work. Whatever flavors you love, use!
