Strawberry Caramel deLite Tart

It’s another Girl Scout Cookie recipe! Some may call these treats “Samoas,” but growing up in the Midwest, where things are practical, we call these Caramel DeLites. And they come in second to Thin Mints, IMO. And of course they need to be baked with!

Getting my creativity on, I transformed a box of cookies into a delicious tart, filled with stewed strawberries. It’s the perfect sweet springtime dessert that everyone will enjoy! Gain extra brownie points with fresh whipped cream on top. And don’t worry if the crust looks like a mess. It WILL taste good!

Make this for your next picnic, for Mother’s Day, or just because you have an extra box of cookies stashed away in your freezer. And eat some Thin Mints while you make it ๐Ÿ™‚

Strawberry Caramel deLite Tart

Serves 6

  • 10 Caramel deLites, halved
    1/3 C old-fashioned oats
    1/4 C melted coconut oil
    1 pint strawberries, quartered
    3 tbsp honey
    3 tbsp cornstarch
    3/4 C water
    6 additional Caramel deLites

Preheat oven to 350. Grab a pie plate.

In a food processor, combine 10 halved cookies with the oats. Pulse until broken down. Now add the melted coconut oil and blend until it starts to come together. Spread mixture into the bottom of the pie plate (no need to grease it). Press down so it’s completely covering the bottom. Bake for 10 minutes.

In the meantime, combine quartered strawberries and honey in a medium sauce pot. Bring to a boil, stirring constantly. In a small bowl, whisk together the cornstarch and water. Add this to the strawberries and reduce heat to medium. Let cook down for about 10 minutes, stirring frequently.

Once the crust is finished, spoon the stewed strawberries and their gelatin into the crust. Refrigerate until the berries are set, about 3-4 hours.

Slice into 6 pieces and place a full Caramel deLite onto each slice. Serve and enjoy!

    Samoas, oops I mean “caramel delites,” are my favorite girl scout cookies and this tart looks divine!
