Energy Muffins: Zucchini and Bananas and Walnuts…Oh My!

Energy and protein bars don’t always cut it. The taste is sometimes lacking, and the size often leaves something to be desired. And let’s face it: an intense workout deserves and intensely flavorful snack to match it. Whether you chow down on one of these muffins before or after exercise (or just for a tasty breakfast) , it’s sure to please. Packed with zucchini, bananas, applesauce, walnuts, whole wheat flour, and coconut oil, you’ll get a nice dose of fiber, protein, carbs and fats. Replenish your body with these homemade baked goods!

One more thing, these are vegan! And low in fat and sugar! And actually super easy to make. A little elbow grease is required to grate the zucchini, but you can do that while watching Netflix or catching up with your best friend (like I did). No zucchini lying around? Replace with equal amounts of grated carrot and a splash of milk. Not a fan of walnuts? Replace with pecans. Going gluten free? Use GF flour instead. Craving chocolate? Toss in a handful of chocolate chips! See how easy this is? Now get baking!

Produce-Packed Energy Muffins, adapted from Super Kale Fantastic

Makes 12 large muffins

  • 2 C organic whole wheat flour (like Bob’s Red Mill)
  • 3 tsp baking powder
  • 1/2 tbsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 C brown sugar
  • 2 small zucchini, grated (remove the ends first)
  • 1/2 C chopped walnuts (or other nut of choice – even shredded coconut!)
  • 2 overripe bananas, mashed*
  • 2/3 C unsweetened applesauce*
  • 1/3 C coconut oil, melted and cooled

Preheat oven to 350. Line a muffin tin with paper cups and spray the bottoms with olive oil PAM.

In a large bowl, mix together the flour, baking powder, and spices. Stir in the sugar, zucchini and walnuts.

Mix in the mashed bananas, applesauce and melted oil. Mix only until all ingredients are incorporated. If using, add the chocolate chips now too.

Spoon the batter into the prepared muffin tin. I used an ice cream scoop, and each paper cup got about two scoops’ worth. These will be pretty big!

Bake on the middle rack for 20 minutes. Allow to cool in the muffin tin for 10 minutes, before removing to a cooling rack. Let cool completely and store in an airtight container. Eat within a few days’ time, as the fresh produce will go bad eventually.

My boyfriend and I discovered Core Power “light” protein shakes, which are pretty tasty, and made of ingredients I can actually pronounce, but one can only drink so many of these.

*UPDATE: I made these again, but ran out of applesauce. So, I had about 1/3 C applesauce, and simply added a third mashed banana to the mix. ALSO: this recipe goes quicker with the use of your food processor. First shred the zucchini (ends trimmed off and chopped into big chunks), then chop the walnuts! Super fast and easy.
