Green Monster Frittata

What do I do when the fridge is stocked with an over-abundance of vegetables? Throw ’em together in a pan, saute, and add eggs! That’s right, here’s another frittata recipe for you – I really can’t get enough of this simple yet versatile dish.

Green Monster Frittata

A bunch of green vegetables + healthful eggs + a bit of creamy cheese = perfect dinner entree or breakfast! The fiber combined with the protein and fats makes the ideal combination for a nutritious meal. Missing one of the vegetables? Sub in whatever you have!

Serves 6

  • 2 tbsp olive oil
  • 10 Brussels sprouts, quartered
  • 1 green bell pepper, diced
  • 1 small zucchini, sliced and quartered
  • 1/2 head broccoli or cauliflower, chopped
  • 6-7 eggs
  • 6 tbsp water
  • 1/2 tbsp dried parsley
  • 1/2 tbsp dried oregano
  • 1 tsp crushed bay leaves
  • 1 tsp each of sea salt and black pepper
  • handful of freshly shredded melting cheese – I used extra sharp provolone
  • 3 green onions, chopped

Preheat oven to 350.

Heat oil over medium heat in a large oven-safe frying pan. Saute all vegetables together. Cover with a lid and stir every now and then, for about 10-15 minutes.

In a large bowl, whisk eggs with water, herbs, salt and pepper.

Once vegetables are to your liking, spread them out evenly in the pan. Carefully pour the egg mixture on top. Cook on medium heat, uncovered, for 3 minutes.

Sprinkle cheese on top. Transfer the pan to the oven and bake for 12 minutes. Remove, sprinkle on the green onions, and let cool 5 minutes before slicing into 6 pieces. Serve hot, and enjoy!
