Perfect Chocolate Chia Pudding

I’ve been wary of “chia pudding” ever since first hearing of it. The recipes have flooded the internet, and vegan “pudding” takes storm as the new dessert of health nuts everywhere.

Well, now I’m on board the chia train. Chia seeds themselves are an incredible food. They’re full of literally everything that is good for the body. And they have this strange property of becoming gelatinous in liquids over time. They are, then, the perfect ingredient for a vegan pudding. Stir a few things together, dump in some chia seeds, wait a few hours, and bam! Dessert that’s the consistency of pudding, but has the health benefits of…well, a healthy version of pudding, I suppose. But to find the right ratio of ingredients has been my challenge. Until now. I found the perfect recipe for the perfect chia pudding. In the spirit of sharing, here it is!

When you’re in desperate need of chocolate, whip up some of this pudding. It’ll satisfy all your cravings, and leave you feeling good physically and mentally!

Perfect Chocolate Chia Pudding

Perfect Chocolate Chia Pudding, adapted from Oh She Glows

Serves 2

  • 3 tbsp cocoa powder
  • 1/4 C chia seeds
  • 1 tbsp maple syrup
  • 1 1/4 C non-dairy or skim milk
  • mini chocolate chips or chocolate shavings to garnish

Mix cocoa powder and chia seeds in a bowl. Stir in maple syrup and milk until well combined.

Let stand in fridge for at least 4 hours, or longer. Seriously. It’s worth waiting for.

Divide into two small serving bowls, garnish with chocolate, and enjoy! The pudding will be thick, creamy and full of chocolate flavor. Without all the added fat and sugar of traditional chocolate pudding. A rather indulgent treat, without the guilt! What’s not to enjoy about this.

      Might you have one for a chocolate chip cookie version? That’s the next flavor I want to attempt.

        I don’t, but I have something you may be able to tweak into chia pudding. I do a chocolate chip cookie yogurt that’s similar to your cherry chocolate yogurt.

        Greek yogurt, peanut butter, maple and chocolate chips. It’s fabulous. Wonder how we could tweak that…hmmmmm…
