Spaghetti with Creamy Butternut Squash

Forget standard mac & cheese. THIS is the ultimate fall comfort food. It’s warm, creamy, carb-loaded (but the good kind!), and super healthy! It smells amazing while it’s cooking, and tastes amazing while it’s going down. Pair it with a nice fresh salad or some raw veggies (I ate raw broccoli with it), and you have yourself the ultimate meal. Warm up your kitchen and your insides with this tasty dish tonight!

Spaghetti with Creamy Butternut Squash

Spaghetti with Creamy Butternut Squash, adapted from Skinny Taste

Serves 4

  • 1 butternut squash, peeled and cubed
  • 1 tbsp coconut oil (or oil of choice)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp dried rosemary, crushed
  • 8 oz whole wheat spaghetti pasta (or a gf variety)
  • fresh cracked sea salt and pepper to taste
  • 1/4 C freshly grated parmesan

Bring a pot of water to boil.

While that reaches boiling, prepare squash. Peel, slice open, scoop out the seeds (save for roasting!), and dice.

Scoop diced squash into the boiling water. Return to boil and let cook for about 15 minutes, until soft.

In the meantime, heat oil in a large pan over medium-high heat. Prepare onion and garlic, and add to hot pan. Saute for 5-7 minutes.

Once the squash is done, use a slotted spoon to transfer cubes to a blender. Refill the pot with water and bring back to a boil for the pasta – your water will be orange, but that’s ok! Cook the pasta according to package directions.

Blend squash into a puree. Add to the saute pan and stir. Add in rosemary, salt, pepper, and cheese. Mix well, and reduce heat to medium and let cook, uncovered.

Drain the cooked pasta, reserving some of the water to thin out the sauce if necessary. Transfer pasta to the sauce and stir well to combine. Add water if you want it thinner.

Serve in bowls and top with additional grated parmesan cheese if desired.

    This is the perfect comfort food the minute I smell it cooking in the kitchen it brings the Fall season to life. Pureeing it and adding the pasta noodles is a new twist for myself and I’m anxious to try it.

      Let me know how you like it! I’ve never pureed a squash before, so this was new for me. And I’m an instant convert!
