Veggie Feta Tortilla Pizza

Pizza is….everything. I could eat it day in, day out, all day long, and never tire of it. Because it’s so versatile! There’s meat pizza, veggie pizza, 5-cheese pizza, Greek pizza, Mexican pizza, breakfast pizza, dessert pizza. There is no end in sight, and I love it 🙂 But when you think about it, pizza isn’t always that healthy. Carb-filled crust, processed sauce, salty cheese, and enough grease to make the acne break out an hour later.

But fear not! Pizza, like most foods, can easily be made healthy, satisfying and delicious all at the same time. Replace the thick, white flour crust with a whole wheat tortilla. Remove the presence of sauce completely (or at least make your own out of fresh tomatoes and herbs), swap fatty cheddar cheese with a lighter feta, and pile on the veggies rather than the various meats.

Veggie Feta Tortilla Pizza

In no time, you’ll have a healthy, veggie and feta pizza on a crispy tortilla crust. Serve with a salad or some fresh fruit, and you’ve got yourself the perfect post-workout meal! Or, a quick dinner on those busy weeknights. It’s also great for when friends come over – prepare a bunch of toppings, give each person a tortilla, and let them at it! No more fighting over mushrooms or pepperoni. Everyone is happy this way 🙂

And when pizza makes people happy, the world is good.

Veggie Feta Tortilla Pizza, adapted from All Recipes

Makes 1, can easily be multiplied

  • 1 whole wheat tortilla
  • 1 small yellow onion, diced
  • 1 bell pepper, diced
  • 1 roma tomato, diced
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • dash red pepper flakes
  • 1 tbsp olive oil
  • 1/4 C crumbled feta cheese

Preheat oven to 450. Grab a baking sheet or pizza pan.

Lay the tortilla on the pizza pan.

In a bowl, mix together veggies, seasonings and oil. Stir well.

Spoon veggies on top of the tortilla. You may have extra, in which case you could roast them in an oven-proof bowl/ramekin. That’s what I did, and spooned them onto a bed of lettuce with some balsamic vinegar! Perfect side dish. Or, I suppose you could make two pizzas, and just double the amount of cheese you need

Sprinkle cheese on top of veggies. Bake for 11-13 minutes at 450 on the middle rack.

Remove from oven once the tortilla looks nice and crispy and you can smell the garlic. Slice into 4 pieces, and enjoy!

Use whatever veggies you like or have on hand. Kalamata olives, artichoke hearts, mushrooms, anything.
