Flourless Peanut Butter Swirl Brownies

This recipe is the perfect combination of peanut butter and chocolate. It’s made slightly healthier with the use of oats (surprise!) instead of flour, and the huge amount of peanut butter plus Greek yogurt means you don’t even need any butter! I made this for my friend Erin’s housewarming party, and everyone gobbled them right up. Though she did inform me the leftovers were just as good for breakfast the following morning 🙂 A dessert that functions as a breakfast food? You MUST make these now!

Oh. And they’re super easy. And delicious. And rich. And your kitchen will smell wonderful because of them. AND you can make them gluten free if you use certified GF oats. You’re welcome 🙂

Flourless Peanut Butter Swirl Brownies

Flourless Peanut Butter Swirl Brownies, adapted from Sally’s Baking Addiction

Makes 16 decadent brownies

  • 3/4 C nonfat plain Greek yogurt
  • 1 tsp vanilla extract
  • 1/4 C skim or nondairy milk
  • 1 large egg or mix 1 tbsp flaxseed meal with 3 tbsp water to create a vegan flax egg
  • 1/4 tsp fresh cracked sea salt
  • 1 tsp baking powder
  • 1 C granulated sugar
  • 1/2 C unsweetened cocoa powder
  • 1/2 C old-fashioned rolled oats (uncooked!)
  • 3/4 C creamy peanut butter (avoid the natural type)

Preheat oven to 350. Spray an 8×8 inch pan with PAM.

Get out your food processor, or blender, and dump in all ingredients except the peanut butter. Put the liquid ingredients in first to make it easier. Blend until mix is smooth and oats are ground up. You will have to stop and scrape down the sides a couple times.

Pour batter into prepared baking pan – the batter will be thin. In a microwave safe bowl, microwave peanut butter for 30 seconds. Drop melted peanut butter by spoonfuls onto the batter. Use a knife to swirl the peanut butter into the batter, creating a marbled effect.

Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Remove to a cooling rack to let the pan cool down. But do NOT cut them yet! They are super fudgy, so you’ll want to let these chill in the fridge a couple of hours before serving (it’s hard to resist trying them, but you’ll appreciate it later!)

Cut into squares – I made 16 of them – and enjoy! You may need do drink milk with these 🙂
