This past Saturday evening, my sister and I had the pleasure of having our Oma and Opa (German grandparents) to our apartment for dinner! We moved two months ago, and they’ve wanted to see it ever since. We finally had the opportunity to show them around, and of course, make dinner for them.
Growing up with them next door, we always wandered over to their house to see what was cooking, and to snitch a cookie or two :) Now it’s time to cook for them! It was so lovely having them over, showing off the new house, and demonstrating just how much I’ve learned from them. Thank you, Oma and Opa! We love you!
With a little recipe searching and a lot of creativity, I came up with a delicious, light, summer-appropriate menu, which didn’t require me to slave all day in the kitchen over a hot stove. And it was all homemade :) Check out the menu, and stay tuned all week for the recipes!
Appetizer: Pita chips with Greek yogurt dip (below)
Salad: Arugala Orange Salad
Dessert: Orange Cinnamon Cake
- Pita chip crackers (or make your own)
- 1 C plain nonfat Greek yogurt
- 1 tbsp fresh mint, chopped
- 1 small garlic clove, minced
- 1/8 tsp salt
Combine yogurt, mint, garlic, and salt. Let sit in the fridge for a couple hours, to let the flavors meld.
Serve with pita chips and a nice chilled Pinot Grigio.
This is such a nice, cool, light appetizer on a warm summer day! The mint and garlic blend well together.
