Light Buffalo Chicken Dip

This recipe comes to you from my boyfriend! He’s made it for my friends twice now, and both times it’s been completely devoured. It’s delicious, and not all that horrible for you. The use of lighter cheeses and dressing, plus the lean protein of chicken, and the fiber of fresh veggies to dip into it, makes it a slightly less guilty snack at your next party. Everyone will love it!

Light Buffalo Chicken Dip

Serves 8

  • 3 chicken breasts
  • 3/4 block of Neufschatel Cream Cheese (the kind with 1/3 less fat), room temperature
  • 6 tbsp light or fat free ranch dressing (or bleu cheese dressing if that’s what you like)
  • 1/2 bottle (the 12 oz size) of Franks Red Hot Buffalo sauce (or make your own!)
  • 3-4 ribs celery, finely chopped
  • 1 C shredded 2% skim cheddar cheese

Preheat oven to 400. Or, prepare this dish ahead of time, keep it in the fridge, and stick it in the oven when your guests arrive.

Boil chicken breasts in water. You could bake it, but this is pretty fool-proof and you can prepare the rest while it cooks.

Spread cream cheese on the bottom of a 9×13 glass pan. Use the whole block of cream cheese if you like, but it’s not necessary.

Spread FOUR tbsp ranch dressing on top of the cream cheese layer.

Once chicken is cooked, shred it with a fork. Mix it with 1/2 C buffalo sauce and the chopped celery in a bowl. Spread in an even layer on top of cheese and ranch.

Spread another two tbsp (or more) of ranch on top of the chicken layer. This gives the chicken a little more moisture on top.

Sprinkle shredded cheese all over to cover. Bake for 20 minutes, or until cheese is completely melted and delicious-looking.

Allow to cool for 15 minutes. Serve with tortilla chips and raw veggies, such as cucumber slices, carrot sticks, celery sticks and sliced bell pepper.

Note: If you want to make a vegetarian version (and I will next time), substitute two cans of rinsed & drained chickpeas for the shredded chicken breast. Easy!
