Berries and Cream Oatmeal

What do you do when there’s a surplus of berries in your house? Dump them in oatmeal, of course! Get some vitamin C and antioxidants into your system at the start of the morning, and you’re good to go! If you want to be a bit more indulgent, try out the Chocolate Covered Strawberries & Cream oatmeal.

Berries & Cream Oatmeal, inspired by The Oatmeal Artist

Serves 1

  • 1/2 C old-fashioned rolled oats
  • 1 tsp cinnamon
  • 1 tbsp flaxseed meal, chia seeds or wheat germ
  • 1/2 C skim or non-dairy milk
  • 1/4 C plain or vanilla non-fat Greek yogurt
  • 3/4 C chopped mixed berries (I used blueberries and strawberries, but go wild!)

Overnight Oatmeal:

Mix all ingredients, except fruit, very well together in a bowl with a lid. Add berries on top, cover, and set in fridge overnight or at least 4 hours. When you’re ready to eat, remove from fridge for 10 minutes, and then devour!

Stovetop Oatmeal:

In a small pot, cook together oats, 1 C milk, flaxseed, and cinnamon. Cook to your desired consistency. In the last minute before it’s done, stir in yogurt. Transfer to serving bowl and add berries on top. Stir in and eat!

Why add cinnamon, flaxseed and Greek yogurt? Cinnamon has many health benefits and a nutritional profile that will make you want to eat it daily! Flaxseed is high in fiber and contains healthy fats. And Greek yogurt is touted for its high protein content. Plus, adding these to oatmeal give it extra flavor and depth, and will keep you full longer!
