Cake Mix Cookies

You can do a lot with cake mix, aside from making actual cake. My latest addiction is cake batter dip. But a good ‘ole classic that I’ve been making for probably 10+ years are cake mix cookies! Yes, cake and cookies all rolled into one. And you only need three ingredients! I don’t know where I learned this, but long ago, I would make these so often, that I now have the recipe engrained in my memory. You should too 🙂 These cookies are great if you’re low on time and resources, or just want a quick cookie fix.

Cake Mix Cookies


Cake Mix Cookies Makes about 2 dozen cookies

  • 1 box funfetti cake mix (or any flavor you like – I bet red velvet cake cookies would be divine)
  • 2 eggs
  • 1/3 C melted coconut oil

Preheat oven to 350 degrees. Spray two cookie sheets with PAM.

In a large bowl, mix all ingredients together until completely combined. Use a small ice cream scoop (or two spoons, or your hands) to form cookies. Place about an inch apart from each other on the sheets. If you’re baking for a themed event, or the holidays, you can use colored sugars and a flat-bottomed glass to press the cookies down and make them even more colorful. I love doing this around Christmastime…an easy, delicious cookie that you can make a ton of in a short time!

Bake for EXACTLY 7 minutes and 30 seconds. DO NOT DEVIATE FROM THIS. Take them out immediately, and smash down with a fork, like you would with a peanut butter cookie. They’ll look under-baked, but let them sit on the pan for a minute, and remove to a cooling rack to cool completely.

Once cool, store in an airtight container. These never last long in my house, because we tend to eat them when no one’s looking! I’d suggest you make a double batch right away if you fear housemates and family members snatching them up while your back is turned. Seriously.
