Plum Pecan Oatmeal

The fruit & nut combination has always been a favorite of mine. From yesterday’s Vegan Nutty Peach Crisp, to a simple snack of apple slices + peanut butter, all the way to walnut-filled banana bread, the two types of food just seem to go together well. Tastes compliment each other, and the combination of carbs and sugar in fruit plus the protein and healthy fats in nuts, make for a satisfying and delicious pairing every time. Even for breakfast! Which spurred this oaty creation.

Plums are generally a bit tart in their sweetness, and biting through that purple skin to reveal a sweet interior is a lovely aspect of summertime eating. Pecans, traditionally used in many desserts (oh, how I miss my grandma’s pecan pie!), pair well with the dichotomy that is the plum. And it’s even more enjoyable as a breakfast! Slice up a plum, stir this together, and enjoy for breakfast the next day, or right now if you dig out the saucepan.

Plum Pecan Oatmeal

Serves 1

  • 1/2 C old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1-2 tbsp wheat germ or flaxseed meal
  • 1 plum, washed and sliced
  • 1/4 C chopped pecans
  • 3/4 – 1 C skim or non-dairy milk
  • Stevia, honey or maple syrup, to taste

Overnight Version:

In a bowl with a tight cover, mix all dry ingredients together well. Stir in milk and sweetener to your desired taste and consistency. Cover with lid and store in fridge overnight.

The next morning, stir again and eat cold, or microwave for 1-2 minutes, to reach desired temperature and consistency. The longer you put it in the microwave, the thicker it will become.

Stovetop version:

Bring 1 C milk to boil in a small saucepan. Cook oats with cinnamon and wheat germ or flaxseed meal. In the last minute, add sliced plum and pecans. Stir in sweetener, if desired, and serve hot. I like tasting the natural sweetness of the fruit and the nuttiness of the pecans, so I don’t add any additional sweetener, but not all palates are the same!
