Cookie Dough! In just 4 ingredients

You’re making your favorite batch of cookies, and as a good baker, you sample the dough – for science. But that sample turns into a second spoonful, and a third, and soon enough, you realize you’ve gone through your entire collection of teaspoons, and they’re all sitting in the sink waiting to be cleaned. Yes, this has happened to me before. In fact, it happens almost every time I whip up a batch of classic chocolate chip cookies. My family had even gotten into the habit of doubling the cookie dough recipe just so we’d have enough dough to actually BAKE some cookies! We’re that kind of family 🙂

But ten minutes later, it hits you…the stomach ache, the sluggishness, and the realization of how much of the sugar-butter-flour combo you just devoured, and how insanely unhealthy (yet delicious) that is. So here’s what I propose to you: a healthy version of cookie dough! Yes, it’s possible. Great to whip up while you’re making actual cookies, so you don’t over-indulge, and even better to mix together late at night while watching your favorite shows and being a (health-conscious) couch potato.

That’s what inspired this creation last night. I wanted something sweet – peanut buttery and filled with chocolate – but not something I’d regret 10 minutes later. Give it a shot, and you won’t regret it!

Healthy Peanut Butter Chocolate Chip Cookie Dough – makes one serving (but multiply as much as you like)

  • 3 tbsp rolled oats
  • 1 tbsp real maple syrup, or honey or agave nectar
  • 1 tbsp natural peanut butter (or other nut butter)
  • 1 handful dark chocolate chips

Add all ingredients, in the order above, to a small bowl or mug. This is what you’ll eat out of. AND THAT’S IT. Seriously. I PROMISE it will taste like peanut butter cookie dough with chocolate chips stirred in. Girl Scout honor.

If you don’t want the consistency of whole oats, throw them in a food processor or blender first, and then mix in the rest of the ingredients. It’ll mimic the consistency of “real” cookie dough, plus the awesome flavor!

You get the fiber of the oats, the natural sugars of the syrup, the healthy fats and protein of the peanut butter, and the antioxidants & indulgence of dark chocolate! You’ll be happy you went with this, and not your traditional cookie dough.

So go! Stir some up! Make some for your roommate, or kids when they come home for school! Serve with a glass of cold milk and all will be right with the world.

    YUMMY this sounds good….looking at yur posts i see yur into Zumba.I dont go to any classes but I do try and do it as much as I can on the Wii!!! All yur recipes sound super scrummy!!!

      And, if you want an extra flavor kick, sprinkle in some cinnamon! It’s tasty, and really quite healthy!
