My friend, Erin Kunert, over on GreatIdeasByErin, asked for slow cooker recipes to add to her blog. Of course, I didn’t hesitate to contribute! In addition to providing a link to my Vegetarian French Onion Soup, I also jotted down my ever-trusted slow cooker oatmeal recipe to share with her readers. I think I’ll share it with you too.
Slow Cooker Oatmeal
- 1 C steel cut oats
- 4 C water
- 4 tbsp cinnamon (or less)
- 1 tbsp ginger
- 1 tbsp nutmeg
- 1 tsp salt
- 1/2 cup dried fruit
- 1/2 cup chopped nuts
- 2-3 chopped apples
The night before: Spray slow cooker with PAM, add all dry ingredients, mix well, then add the water. Mix again. Cover, set to “low” for 6-8 hours (or high for 4 hours).
In the morning, mix well again, serve in bowls, and enjoy hot! This also makes great leftovers – divide into 4 portions, stick in the fridge, and reheat as necessary, adding a bit of milk before doing so. Insanely healthy, delicious, and very versatile! I make this on Sunday nights, and I have breakfast for myself for the next 4 days.
You can also add in 4 tbsp flaxseed meal, or chia seeds – not necessary, but this has added health benefits, like fiber and omega-3 fatty acids.
